Ingredients: 
  • 1 cake firm tofu (16 ounces)
  • 2 tablespoon olive oil
  • 1/2 cups diced onions
  • 1 cup peeled and grated carrots
  • 1/2 cup diced bell peppers
  • 1 1/2 cups chopped, fesh spinach (or other dark leafy green such as kale or chard)
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh basil (or 1 teaspoon dried)
  • 1 tablespoon fresh dill (or 1 teaspoon dried)
  • 1 cup cooked brown rice or wild/brown combo
  • 1/2 cup chopped walnuts or pecans
  • 1 cup bread crumbs
  • 2 tablespoons tahini
  • 2 tablespoon soy sauce
  • 2 tablespoons Dijon mustard
  • 1 egg
  • Salt & Pepper to taste
Directions: 
  1. Press tofu between 2 plates for 15 minutes to remove some of the liquid.
  2. Heat oil in frying pan and saute the onion, carrots, peppers, spinach, oregano and fresh herbs for about 7-10 minutes until wilted.
  3. Crumble tofu into a bowl (or grind with food processor) then combine with the remainder of the ingredients.
  4. Mix well with your hands.
  5. Bake in 375 celcius oven for about 30 minutes or until brown, turning half way though.

This burger is all about flavour. It's firm but moist, tastes great, works well with tradtional condiments and you wont miss the meat (for all you meat eaters out there)
