Ingredients: 
  • 1/3 cup white long-grain rice
  • 2 15-oz cans black beans
  • 1 medium shallot, chopped
  • 6 slices pickled jalapeno
  • 1 Tbsp. prepared barbeque sauce
  • 1 tsp. chili powder, preferably ancho
  • 1/2 tsp. ground cumin
  • sea salt & ground pepper
  • 6 hamburger buns
Directions: 

Modifications to recipe:
-added one tbs of flour (I found it a bit wet)
-used mixed grain rice blend
-used pickeled hot peppers instead because it's what I had on hand. 
-used gluten-free BBQ sauce

This recipe is adapted from the Rosewood Grill (Hudson, OH) veggie burger featured in June 2013 bon appetit. 
Served with avocado slices, 1 year old cheddar, and homemade tomato and shallot viniagrette
This is a very very tasty veggie burger, kudios to Rosewood Grill for their creation (although mine was adapted slightly). I did find them a tad mushy though so I would have liked to try them at the restaurant to see if they have a trick to make them firmer - I can embrace the softer veggie burger but it's nice when it doesn't fall out of the bun!
