Ingredients: 
  • 400g (about 4-5 large) Portobello Mushrooms
  • 1+ cup of breadcrumbs
  • Handfull of Toasted Pecans
  • 1 clove of Minced Garlic
  • 1 tsp soy sauce
  • 2 tablespoons or tahini or humus or olive oil
  • Fresh or dried herbs (I tried oregano but thyme or rosemary would be nice too)
  • pepper to taste.
Directions: 

Chop mushrooms in food processor (careful not to over-process or it will become mushy), stir in the remainder or ingredients, adding breadcrubs if too wet. If you are finding that it's not holding together well then add half the mixture back into the food processor and combine until almost a paste then mix into rest of ingredients.

Cook on hot BBQ for 5 min per side.

 

This veggie burger tastes great and holds together pretty well in the bun. Good for you too, portobello mushrooms contain lots of B vitamins that help turn carbs into fuel for your body. Good alternative to the straight up portobello burger for those who love mushrooms.
