Ingredients: 
  • 1 large eggplant*
  • 3/4 cup quinoa flakes
  • 1/2 small onion, chopped fine
  • 2 cloves garlic cloves, minced or pressed
  • 1 cup cooked lentils
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika (spicy or mild)
  • 2 teaspoons potato starch, cornstarch, or arrowroot
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon agave nectar (or other sweetener)

I tried these veggie burgers at the beginning of the summer and was really happy with the way they tasted. Their subtle curry flavor is really nice and they stayed together quite well. I substituted cooked Quinoa for the Quinoa flakes. I haven't tried the spicy relish that she recommends as a condiment but it looks great too! (had with dijonaise which worked).
