Crispy Zucchini Burgers

Ingredients: 
  •     2 tsp olive oil
  •     1 small onion, chopped
  •     2 cloves crushed garlic
  •     2 carrots, shredded
  •     2 small zucchini, grated
  •     2 stalks of celery, grated
  •     1 1/2 cups rolled oats
  •     1/4 cup shredded Cheddar cheese
  •     1 egg, beaten
  •     1 tablespoon dijon mustard
  •     1 1/2 cups all-purpose flour
Directions: 
  1. Drain much of the water out of the zucchini. Heat oil in a pan and add garlic and onion to cook for 5 minutes. Add carrots, zucchini and celery and cook for an additional 3 minutes. Remove from heat and mix with oats, cheese, egg and mustard. Refridgerate for one hour.
  2. Put flour on plate. Form into about 8-10 patties and then dip both sides of each patty into the flour.
  3. Heat cast iron grill to high, add some oil and when oil has heated add the patties, grill for 5 minutes per side until golden brown and heated through.

These burgers are good because of their mild, fresh flavor that goes with many toppings and condiments. Plus they are a great way to use some of those extra zucchinis from the garden. I gave them a biteability score of 2 because, while they are soft inside upon bitting, they have a crispy crust that allows them to stay together in the pan and to the mouth.

Interesting tidbit (maybe :) I have since found out that the "zucchini" that I used in this recipe was actually a pumpkin-zucchini hybrid. Apparently the zucchini plant and pumpkin plant I had in my garden last year had an extramarital affair thus causing the pumpkin seeds to be a cross between the two plants. I foolishly kept the seeds (apparently this is common with squash plants and not a good idea to keep the seeds) and planted this year and vola pumpkini. Shape of a spaghetti squash, color of zucchini, flesh a little like pumpkin and zucchini. Anyhoo, my daughter is a little disappointed that we don't have a pumpkin patch this year as planned...
